Eat the Colors of the Rainbow

This is Alliance Architects’ second year to have Health and Wellness Month, but this year, it hit me right in the gut. I recently became vegetarian and keeping healthy has been something of a challenge. After letting go of meat, getting the right amount of energy-providing nutrients and eating things that make me FEEL full has been rough. Nothing keeps the stomach empty quite like rabbit food!

Starting Class

So when our team brought in Wendy to teach a healthy cooking class, I was ecstatic. Wendy’s view of life is very holistic—to think of food as fuel and to use that fuel to live a healthier life. The premise of her class is to give easy ideas to transform what you normally eat into healthier, power-packed options. Perfect.

You really had to be there to experience the energy and knowledge Wendy gushed, but my key take-away from the event was this: Eat the colors of the rainbow.

Basically, the easy way to make sure you’re getting enough nutrients is to eat foods in all different colors. Think red peppers, green kale, yellow squash. Perfect shortcut for those who (like most typical working folks) don’t have time to bust out a calculator to see if their meal has enough iron.

Tastings included Beet Carrot Soup, Millet Burgers, Kale Salad with Tahini Dressing, and Fruit Tart with Pecan Crust. Who knew Kale needed to be massaged?
